Chocolate-Mayonnaise Cake Recipe


Hello everyone! It's been a long time since I've managed to make a post. Long story short, this was the hardest semester EVER and I'm officially finished with this semester so I decided to celebrate by posting a very overdue recipe!



This cake is so yummy and moist! I was a little nervous about the mayo, but it turned out to be the perfect ingredient for a perfect chocolate cake. I adapted this recipe from Southern Living so let's get to it~

Ingredients:

Cake
- 2 cups all-purpose flour
- 2/3 cup unsweetened cocoa
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon table salt
- 1/4 teaspoon baking powder
- 3 large eggs
- 1 2/3 cups firmly packed light brown sugar
- 1 cup mayo
- 1 1/3 cup hot water

Chocolate-Cream Cheese Frosting
- 1 8oz package of cream cheese, softened
- 2 teaspoons vanilla extract
- 1 32oz package powdered sugar
- 1/2 cup unsweetened cocoa
- 1/2 to 1 cup milk (based on frosting consistency)

Prep:
-Preheat oven to 350
-Grease a 13x9 inch pan

Cake Recipe

Step 1:
Whisk together flour, unsweetened cocoa, baking soda, cinnamon, salt, and baking powder in a medium bowl

Step 2:
Beat eggs, sugar, and vanilla at medium-high speed with a mixer for about 3 minutes or until the mixture is colored light brown and ribbons form when beater is lifted

Step 3:
Add mayo and beat at a low speed until combined

Step 4:
Add flour mixtures to egg mixture alternately with hot water, beginning and ending with flour mixture. Beat at low speed just until blended after each addition. Then, pour batter into prepared pan.

Step 5:
Bake at 350 for 30-35 minutes or until toothpick inserted in center comes out clean. Cool completely on a wire rack for about 1 hour and spread chocolate-cream cheese frosting after cooled.

Chocolate-Cream Cheese Recipe

Step 1:
Beat the cream cheese, vanilla extract, and milk with an electric mixer until creamy. In this step, add a little bit of milk at a time until your frosting comes out to be creamy. You do not have to add the entire 1/2-1 cup milk. 

Step 2:
Whisk together powdered sugar and cocoa in a medium bowl and gradually add to the cream cheese mixture. Beat at low speed until blended. After all ingredients are blended together, increase speed to medium and beat 1 to 2 minutes or until light and fluffy. 

The original recipe called for heavy cream and butter for the frosting. That's definitely not a healthy combination for anyone trying to enjoy a guilt-free slice of cake. With the substitution of butter and heavy cream for milk, I was able to create the same taste but with less calories to worry about!
